MARITOZZO: love at first bite.

Water, flour, yeast, sugar, milk, eggs and butter (or oil). This is a very ancient recipe of love. It makes a sweet bun with a big cut in the middle, to be filled with more love: whipped cream. There are also variations: custard, chocolate cream, raisins, peanuts, not to mention the sour versions, where the only limit to creation is the chef fantasy.
You can have a traditional Roman maritozzo for breakfast, mid-morning snack, after-lunch dessert, afternoon snack, after-dinner dessert, basically whenever you want, no one’s judging.
Its history is... lovely. The name is a dialect word for ‘husband’. A legend says that a girl would give it to a boy to win his heart, hoping for an engagement. If the boy accepted, he would become a 'maritozzo', a husband-to-be. It could be a real competition among girls! Who made the best one, could get the best bachelor in town. And then, happy ever after.
Another legend says that, on the contrary, it was custom for a guy to give it to his girlfriend, sometimes with a ring hidden inside. It was a proposal bun! I don’t know you, but I would have accepted even without the ring inside. Whipped cream in Rome is good enough to say yes to basically anything and anybody.

But don’t worry! Today in Rome, maritozzo is just one of the best sweet treats this city offers, you can have it without having to get married. If you’re in town, try it – it’s a must. And if you fall in love with the chef, it might be a plus. Who knows…
